King Oyster and Enoki Tacos

Taco Night!

Time: 20 Minutes

Serves: 4-6
1 Cup of Vegtago Cheddar Cheese
Taco Dinner Kit (10 Shell Kit)
Taco Sauce from Taco Kit – we used the sauce and not the seasoning because the seasoning contains soy.
Olive Oil
2 Green Onions- chopped
Bunch of chopped lettuce
2 King Oyster Mushrooms
1 Package of Enoki Mushrooms
1 tsp Chili Powder
Salt and Pepper

1. Start by taking a fork and pulling the sides of the king oyster mushrooms, creating a “pulled pork” look. Chops the ends of the enoki off and use a fork to separate them.
2. Heat approximately 2 tbsp of olive oil in a skillet over medium-high heat. Once the oil is heated up, add both mushrooms.
3. Stir the mushrooms constantly, when they begin to soften (around 5 minutes) add in the chili powder. Continuing stirring and then add a dash of salt and pepper.
4. After 3-4 minutes, add in the taco sauce (or other salsa). Reduce the heat to medium-low and then add in our Vegtago Cheddar Cheese! 5. Continue cooking for another 2 minutes.
Assemble the taco in any order you desire, we did ours lettuce first, then the “meat” and finally chopped green onions and more cheese on top! Garnish with some chopped cilantro. Serve and Enjoy!
